Community report: I have been told in person by the owner that many items use only butter, but some use other oils. I haven't gotten any clarification on which items only use butter and which items don't, but that I can always ask at the counter and they will tell me what oils an item uses.

They use coconut oil in all their cooking/grilling (including house made tortilla chips). Bacon fat only in beans and refried beans. They do have margarine in the sauces (red & green sauces). They will sub extra cheese, salsa & sour cream.

It's worth noting that, in addition to the items you mentioned, Pappasito's Cantina also uses vegetable oil in their preparations."

We skip processed fats and focus on quality. We cook meats mostly in tallows or duck fat for depth, while olive oil handles the rest. Coconut and avocado oils are used on occassion where they shine.
