What is Local Fats?
Local Fats is a community-driven database and searchable map dedicated to helping people find restaurants that intentionally choose specific cooking oils.
We track restaurants using oils like beef tallow, butter, ghee, olive oil, lard, duck fat, coconut oil, avocado oil, and peanut oil—rather than seed oils like canola, soybean, sunflower, or corn oil.
Whether motivated by culinary preference, cultural tradition, or personal choice, the database connects diners with establishments that share their approach to cooking fats.
What cooking oils are tracked in the database?
We track restaurants using a variety of traditional and nutrient-dense cooking fats:
- Beef Tallow: Traditional rendered beef fat, nutrient-dense and highly stable at high heat
- Butter: Rich in fat-soluble vitamins A, D, E, K and conjugated linoleic acid (CLA)
- Dairy Ghee: Clarified butter with a high smoke point, used in traditional cuisines for thousands of years
- Pork Lard: Rendered pork fat, historically used in cooking worldwide
- Duck Fat: Flavorful and commonly used in high-end culinary applications
- Olive Oil: Extra virgin olive oil for salads and low-heat cooking, rich in polyphenols
- Coconut Oil: Plant-based alternative with medium-chain triglycerides and antimicrobial properties
- Avocado Oil: High in monounsaturated fats with a high smoke point
- Peanut Oil: Traditional cooking oil used in many Asian and traditional cuisines
Not supported: Seed oils (canola, soy, sunflower, safflower, corn) and bioengineered oils.
